A very healthy chicken salad recipe that replaces the mayonnaise with a creamy avocado and greek yogurt blend. This actually adds a slightly different flavor that in my opinion is an improvement over traditional mayo based chicken salad. You also get the benefits of fresh avocado and greek yogurt.
Avocado & Greek Yogurt Chicken Salad
Prep Time : 15 minutes.
Ingredients
- Avocado (Medium) - 2
- Plain Greek Yogurt - 1 cup
- Large Chicken Breast - 3
- Red Onion (Medium) - 1
- Garlic Powder - 1 teaspoon
- Onion Powder - 1 teaspoon
- Sea Salt - 1/2 teaspoon
- Ground Pepper - 1/2 teaspoon
- Small Lime - 1
Instructions
- Skin and remove pits from the Avocado's and put them into a large mixing bowl
- Add the Plain Greek Yogurt to the mixing bowl along with the garlic powder, onion powder, sea salt, ground pepper.
- Now cut the lime in half and squeeze the lemon juice into the bowl
- Smash the ingredients together in the bowl until well blended into a creamy consistency
- Chop the red onion into very small pieces and add them to the mixture
- Either cube the chicken or pull it apart as you like and add it to the bowl and stir to coat.
Now you can add the chicken salad to anything you like. I tend to smear it onto tortilla's and roll them up like sushi rolls although pita's or just regular bread is great as well.
