Parmesan Chicken Meatballs (Gluten Free)

  1. Preheat the oven to 400 degrees with oven rack one notch higher than the middle
  2. In a large bowl mix by hand the chicken, breadcrumbs, onion, parmesan cheese, garlic, egg, lemon zest, and salt and pepper.
  3. roll the mixture into 1 1/2 inch diameter balls and place on a foil lined cookie sheet
  4. In a small bowl mix a large spoonful of the pizza sauce with the olive oil and then spread it evenly over the meatballs
  5. Bake the meatballs in the oven for 25 minutes
  6. After removing the cooked meatballs put them on a plate and cover with warmed pizza sauce to serve.
