Parmesan Chicken Meatballs (Gluten Free)

Yield : 12 meatballs
Ingredients
- Ground Chicken - 1 1/4 lbs
- Gluten Free Breadcrumbs - 1/2 cup
- White Onion - 1/3 diced
- Parmesan Cheese - 1/2 cup
- Garlic Clove - 2 minced
- Egg - 1 whisked
- Lemon Zest - 1 teaspoon
- Olive Oil - 3 tablespoons
- Pizza Sauce - 14 oz jar
- salt and pepper - to taste
Instructions
- Preheat the oven to 400 degrees with oven rack one notch higher than the middle
- In a large bowl mix by hand the chicken, breadcrumbs, onion, parmesan cheese, garlic, egg, lemon zest, and salt and pepper.
- roll the mixture into 1 1/2 inch diameter balls and place on a foil lined cookie sheet
- In a small bowl mix a large spoonful of the pizza sauce with the olive oil and then spread it evenly over the meatballs
- Bake the meatballs in the oven for 25 minutes
- After removing the cooked meatballs put them on a plate and cover with warmed pizza sauce to serve.
